Scientists believe that multiple sclerosis (MS) is an autoimmune disorder where immune cells attack nerve cells, causing inflammation and various symptoms.
A recent study in mice and human cells suggests that a protein found in wheat and other grains, amylase trypsin inhibitors (ATIs), may trigger inflammation worsening MS symptoms. The study found that ATIs caused gut inflammation in mice, subsequently leading to central nervous system inflammation and exacerbating MS symptoms.
With MS affecting an estimated 2.8 million people globally, reducing inflammation through a wheat-free diet may alleviate symptoms not only in MS but also in other inflammatory disorders.
