The research indicates a positive relationship between kimchi consumption and health benefits, particularly regarding obesity rates. Different types of kimchi, such as cabbage and radish, showed varying effects on obesity prevalence. However, excessive kimchi intake, defined as more than five servings daily, was linked to increased obesity risk, indicating a “J-shaped curve” pattern. The study underscores the potential metabolic and microbiome health benefits of moderate kimchi consumption, emphasising the importance of incorporating fermented vegetables into one’s diet for improved well-being. It’s worth noting that excessive kimchi consumption may counteract its benefits due to its high sodium content, according to nutrition experts.
